MAPPING SOFT CHEESE LOSSES & WASTE

Following food loss and waste mapping exercises on Woolworths’ spinach and Tenderstem® broccoli supply chains, a decision was made to explore a protein-based product. This work unpacked losses and waste along their soft cheeses supply chain, and provided recommendations for improvement. In addition, the model for analysing products with a high moisture content was strengthened.
